PRODUCT DESCRIPTION:Fresh potatoes which are washed, peeled, trimmed, flake and dehydrated.

INGREDIENT DECLARATION:Potato, pure and natural; no preservatives, processing aides or additives permitted.

ORGANOLEPTIC EVALUATION:

                                       Appearance:White to light cream or light yellow                             

                                        Flavor: Fresh, typical potato flavor, no off flavor.

                                        Texture: Firm, typical of cooked potatoes

                                         Odor: Typical of potatoes, free from off odor

Thickness: 2.5-3.5mm or as per buyers' request
Moisture: 8.0%  maximum

MICROBIOLOGICAL EVALUATION :Standard Plate Count:300,000 / g maximum

                                                     Yeast / Mold: 300 / g maximum

                                                     Coliform: 100 / g maximum

                                                     CP Staph: 10 /g maximum

MICROBIOLOGICAL LIMITS: E. Coli: Negative in 1 gram

                                           Salmonella: Negative in 25 grams

PACKAGING, STORAGE AND SHIPPING: Product must be packed in standardized food grade packaging.  Product must be stored in a cool, dark, and dry facility.Product must be shipped in sealed, clean, standard container.
